Recipe File: Cuban Sandwich

Cuban Sandwich
IN THE CAFES of Havana — and Miami — this classic dish is served alongside strong, sweet coffee, but you can dole it out with chips or french fries.

Ingredients
» 2 slices good-quality French bread
» Mustard (plain yellow is fine)
» Mayonnaise
» Dill pickles, sliced crosswise
» 2-3 slices Swiss cheese
» 2-3 slices ham
» 2-3 slices roast pork
» Softened butter

"Put on some Cuban music for background," says George Zamorano of Capitol Hill's Cuban go-to spot, Banana Cafe.

Spread a teaspoon or two of mustard on one piece of bread and mayonnaise on the other. Place pickles on one slice; then layer cheese, ham and roast pork on the other.

Assemble sandwich and butter outsides of bread.

Place sandwich in an electric sandwich press, or put in grill pan and carefully weight it (use a brick or heavy pot lid).

Grill four to five minutes per side; it's done when the cheese melts.

Slice sandwich on the diagonal and serve.
