YOU HAVE TO TASTE a lot of cupcakes to get it right, says Georgetown Cupcake co-owner Sophie LaMontagne. "We probably eat one to five every day for quality control." She and sister Kathryn Kallinas sell 5,000 of the treats a day, with the line often going out the door. Adapted from their grandmother's recipes, the store's offerings come in almost every flavor imaginable; this month features caramel apple and pumpkin spice. Coming in December: gingerbread and snowball.

You Probably Didn't Know: Of the 60 people who work at the store, just two besides the sisters know the secret recipes.
