ERIK HOLZHERR, OWNER of Capitol Hill bar Wisdom (1432 Pennsylvania Ave. SE; 202- 543-2323), pours about 10 brands of the green spirit. "My newest favorite is Vieux Carre out of Bluecoat Distillery in Philadelphia. It's got really nice balance and strength; it's great to drink straight and mixable." Here, he stirs it into a wryly named ode to Vincent van Gogh, who is said to have chopped off his ear in a fit of absinthe-fueled madness.
Serves one
» 1/2 oz. Vieux Carre Absinthe
» 1/2 oz. Belle de Brillet Pear Cognac
» 1 oz. BlueCoat American Dry Gin
» 2 oz. Fresh-pressed apple juice
» dash of Regan's Orange Bitters No. 6
Shake first four ingredients over ice. Strain into a martini glass and add bitters. Garnish with a pear slice on rim.
